After a lot of research, I bought this book. From first glance, I knew I had the right book. Recipes run the gamut from simple and tasty Maccaroni and Cheese to more complex Sweet and Sour Chicken. The book contains recipes for breakfast, breads, soups, main & side dishes, fish & game, international, beverages, and desserts & snacks. One chapter covers equipment and camp cooking techniques. At just over 200 pages, it's chocked full of great camp cooking ideas.
Many of the recipes call for dried foods, some of which may be hard to find in smaller towns. However, there is a chapter that explains the basics of home food drying.
This is a great resource for anyone who enjoys camping. Whether you camp in a backwoods primitive camp or a more modern setting, you're certain to find plenty to enjoy from this cookbook!

Many also offer variations and leftovers ideas.

The corpse is found in Hell's Kitchen overlooking the Hudson. NYPD Detectives Conor Bard and Ralph Kurtz have the lead though the latter is retiring in a week. The corpse is criminal defense attorney Walter Lawton with mob ties, who has freed many obvious felons from incarceration.
The obvious prime suspect is the victim's wife Holly who will inherit millions. The cops learn her lover is a professional hit man running a Brooklyn kennel Salvatore Zeffel and they fish the murder weapon a 22 out of the river; Sal's choice of guns. The case takes several spins with almost all having an Albanian connection, but none quite making sense. Adding to Bard's confusion is four women in his life: his boss who never leaves the station; his former lover who is seeing jealous Captain Reynolds; Holly who calls him all the time, and Albanian visitor Monica who he calls. He is attracted to the latter two while he wants Reynolds off his back as the case seems to go nowhere.
This is a terrific New York police procedural as nothing is quite what it seems. The banter between the partners is fun and Conor's female problems add depth to him, but it is the whodunit that makes this an entertaining tale. Every clue leads to the Albanian community in the Bronx, but every step forward also leads to a seemingly dead end. Sub-genre fans will enjoy this fast-paced thriller as the streets of Manhattan seem dirtier than usual.

I'm giving this book 5 stars, since it inspired me to create my countertops in concrete; something I wouldn't have done otherwise. Don't be confused by my comments below, I don't regret buying this book at all. I even plan to put concrete countertops in the next house I build. However, there were quite a few hurdles that had to be overcome. It has been mentioned that the author glossed over quite a few things, and I agree.
A few comments:
First, contrary to the author's comments, an electric sander is completely inadequate for vibrating the concrete. Buy or rent a professional vibrator unless you want pinholes in your work. Hand "massaging" and rapping the sides with a hammer will not completely eliminate the problem either. I tried all three methods and still ended up with a moderate amount of honeycombing. As the author mentions, this is easily patched, and it even adds character to the work if you use a slightly different color, but be aware: properly vibrating the mix is not nearly as simple as it seems to be in the book. My comments pertain to a mix that has proper slump (i.e., not too wet).
Second, the author makes a reference to plastic cabinet legs being inadequate to support a concrete countertop. That may be accurate for the flimsy off-the-shelf cabinets, but the plastic cabinet legs that are quickly becoming a standard ... are load-rated at 650 pounds EACH. This is more than enough to support a think concrete countertop (probably even better than a shimmed 2x4 base).
Next, I would have to say that I was slightly annoyed at the lack of "recipes" needed to produce some of the stunning work shown in the book's illustrations. Visiting the author's website was also annoying since there it doesn't help much (unless you want to buy one of his pricey kits.) One of the reasons I went with concrete was because it is cheap. We ended up using Quickrete5000 and a Quickcrete dye (Buff). We threw in a couple of geodes for effect. It turned out quite nice, and works well with our slate floor. I understand and respect that the author is trying to run a business, but I have to reconcile that with my being on a budget.
Again, I'd like to remind the reader that I would not have built my countertop if I had not found this book, but the method for building a form split at the sink seemed a bit silly. They used a single form that then had to be flipped all at once (very heavy, dangerous, and a potential cause for damage to the countertop). Because of the weight, I chose to split my countertop (diagonally at the sink, as in the book), but instead I built two forms. Much safer and easier to flip over.
Finally, it is a matter of taste, but as soon as you are happy with the texture of your countertop, stop grinding/polishing! As he states in the book, the pads are expensive.
One more thing, In the future I'd like to try using something other than melamine for the forms. The slight texture of the melamine is perfectly reproduced in the concrete. I noticed in a few of the angled spots that used paint over bare wood, the concrete was perfectly smooth (i.e., no grinding required). I suspect that using perfectly smooth plywood with a smooth coat of polyurethane would produce a better countertop out of the box. Since I don't really want to expose any aggregate (accomplished by grinding), this might work better for me, although I won't know until I try. All in all, I'd have to say it is a wonderful book, but be prepared to experiment and to think for yourself.

For any culinary chef, the tools you have with you to prepare certain meals are quite important. For many chef's, the knives used are critical in preparing certain meals. In Japan, the Japanese kitchen knives are extremely critical as many dishes include paper-thin dishes.
It's one thing to watch this on television via "The Iron Chef" or watching your sushi chef prepare it at the restaurant. But for many people who enjoy cooking, many people who enjoy cooking know that knives are important and for the last decade or more, the sales of Japanese kitchen knives have been increasing but the question is, do a lot of people know how to utilize them?
With "Japanese Kitchen Knives: Essential Techniques", chef Hiromitsu Nozaki (with Kate Klippensteen) shows you how to create a variety of dishes but also learning how to get started, proper knife anatomy and knife control. Also, gaining knowledge of the three main knives being used.
Hiromitsu Nozaki was the executive chef of Tokuyama and Waketokuyama in Tokyo during the 80's and catered to the Japanese athletes for the 2004 Olympics in Athens. He has published and authored over 40 cookbooks in Japan and together with Kate Klippensteen (who wrote "Cool Tools: Cooking Utensils from the Japanese Kitchen"), both do a great service for upcoming chefs, people who are passionate about Japanese food (especially on how vegetables, fish and meat are cut thinly) and those who have been wanting to invest in Japanese knives.
The book is broken down to three major chapters which are THE USUBA, THE DEBA and THE YANAGIBA.
The Usuba deals with learning how to use rotary peeling, needle cuts, whittling, tea-whisk cut, serpent belly cut and decorative vegetable carving.
The Deba deals with how divide the head from sea bream with turnips, three-piece filleting, straight filleting, butterfyling, etc.
The Yanagiba deals with skinning, slicing (sogizukuri, hirazukuri, uzuzukuri), spiral cuts, double cuts and more.
Each chapter shows step by step of how to prepare a variety of dishes and courtesy of photographer Yasuo Konishi, you get step-by-step photos along with the instruction on how to prepare certain dishes. Also, the finished project which are beautiful, full color, vibrant photos of the dish.
Chefs-in-training will also enjoy the various instructions of how Hiromitsu Nozaki cuts fish for filleting and various other ways that they can incorporate into their repertoire.
And the book does not end there. The book then goes into the range of Japanese knives available and what they are used for. From unagi knives to soba knives, the book goes into detail of knives used on location and most importantly, the sharpening of the knives and the use of the water stone. How to sharpen a knife, how to handle and clean a knife and repairing a damaged blade.
And when you are done, there is also a guide of where to purchase Japanese knives.
As a person who is not a chef, but had a grandfather who was one and also being a person who enjoys cooking and passionate of watching others cook, I've always been enamored by the knife sets that chef's used. As a hairdresser has their shears, a digital designer has their software and hardware, a chef has their set of knives that they depend on for preparing dishes.
For those who are passionate about Japanese food, one can be enamored by the beauty of the needle-cut vegetables, the thinly cut daikon or the thinly sliced fish, it takes a lot of skill to learn this but with a good knife set and the skills taught by Hiromitsu Nozaki, this book is well-designed, the pictures are just vibrant and the step-by-step instructions and recipes are straightforward and easy to understand.
What I enjoyed about "Japanese Kitchen Knives: Essential Techniques and Recipes" is the fact that the Hiromitsu Nozaki and Kate Klippensteen wants to communicate and help the reader as much as possible. Instead of ending it with a primer on Japanese knives and how to cut vegetables and fish, he also goes into further detail on the various knives in Japan but how to clean and maintain them. A lot of this information, one would learn by being an apprentice but now, one can learn from one of the best Japanese chefs through his book. It is important to note that for those who are wanting a more in-depth book on Japanese knives, the many versions out there and the makers and history of knife makers and not the recipes or how to use Japanese knives on vegetables, seafood, etc., that this book may not be for you. The book touches on various knives but its main focus is on how its used in the food process and step-by-step cutting of the food and the techniques.
Informative, educational and overall a magnificent book. "Japanese Kitchen Knives: Essential Techniques" is highly recommended!
