Building on their hunch that inside almost every chemist is a chef waiting to get out, they wrote to 100 of the world's leading organic chemists and asked them to contribute to a cookbook in Tietze's honour. Sixty recipes arrived on their desks: everything from Green Eel a la Marie to Lemon Kiwi Pie, a work far from formulaic.[...] A few recipes are for industrial quantities of chilli or lasagne to feed students; there is an occasional admission that a recipe originates from a restaurant or a wife. A handful are set out with method and materials as if, rather leadenly, for experimental purposes. This is a great book for the kitchen, and there are no recipes. This book explains why you get the results you get (and how to fix them), such as why my steaks toughen as they cool and why I lost color in my parboiled vegetables. I now know whether or not an egg is raw or hard boiled (without cracking it to find out), how to care for my knives, how to check for temp. accuracy in my oven, why the grocery store shouldn't sell green tinged potatoes, and whether or not the chicken I bought has ever been frozen. Simply a great book that'll have you saying "Aha! with every page.

`The New Kitchen Science' by culinary journalist Howard Hillman is a new edition of a 20 year old book which uses the question and answer format common to a lot of cooking advice books. One small problem is that this format is not the best approach to presenting `science' in that science is a body of theories and explained phenomena the understanding of which facilitates applying knowledge to understanding new situations. So, if a book just answers questions, the ability to extend the answers to new situations may not be as good as other expository approaches. That said, I have to say that like Robert L. Wolke's `What Einstein told His Chef', this book may be more accessible to many readers than other conventional writers on the subject such as Harold McGee's works and `The Science of Cooking' by Bristol University (UK) don Peter Barham.
One thing a widely read foodie may want to consider is that they may have already seen most of the material in this book in the volumes cited above. This is not to say this book does not contain some new material, but a devoted reader of Shirley Corriher and Alton Brown may find this new material a bit sparse.
For the reader with little experience with food science reading, I caution you that there are some statements in this book, which are scientifically incorrect. This may be a small point, since the errors are not likely to interfere with your practical cooking, but they may interfere with your ability to extend your knowledge to new situations, which is the whole point of the scientific inquiry in the first place. The first error I noticed is the statement that when a water / alcohol mixture is boiled, the alcohol will all boil off, leaving just water. One of the first things a freshman chemistry student learns is that this is not true. It is true that more alcohol will evaporate than water, until the alcohol and water attain equilibrium. Admittedly, the alcohol will be reduced to a very small level, but it is still there. This is important if someone has physical or religious problems with any alcohol. The second error I noticed is the use of the term `dissolved' when referring to the mixing of flour with water. The proper term here is `suspension', not `solution'. In some ways, this is a more serious error, as suspensions behave much differently than solutions, and the two states are pervasive in cooking techniques, so it is important to know the differences in behavior between the two states.
After all that nit picking, I can still recommend this as a really worthwhile source of information whereby one can improve your cooking, especially for the reasonable paperback price. One especially valuable feature of this book is the excellent bibliography which gives references for all the authors and works mentioned above except for Alton Brown, and a whole lot more.
If you really need to have fun with your reading about food science, I recommend `The Cook Book Decoder or Culinary Alchemy Explained' by retired Canadian professor of Chemistry, Arthur E. Grosser. This book has the added virtue of being great to pass food knowledge on to kids.
The claim to `science' in this book's title is a bit tarnished, but if you are new to foodie science, this book will give you lots of useful information and tell you how to avoid a lot of kitchen pitfalls.

This is a most delightful book, full of kitchen wisdom and chemistry, good and bad puns, and many, many clever witticisms. It is a flat out pleasure to read, but what really makes it such an outstanding piece of work, and a book every kitchen should have, is that it is so full of information, from why and how corn syrup ends up in sodas to why and how to wash your mushrooms--and yes, they are indeed grown in manure, but not to worry, as Wolke explains on pages 286-288 in a little essay entitled, "You Can't Wash Your Car with a Wet Mushroom." (I believe that.) This is the kind of book you'll find yourself reading from cover to cover instead of peeling the potatoes. Speaking of which, Wolke advises that there is a very slight problem with green potatoes, but that reports of their poisonous nature are greatly exaggerated. (See pages 117-120 for the true scoop.)
I have just one problem: nowhere does Wolke say how many sesame seeds are in a teaspoon. However, inspired by Wolke's labor-intensive lime squeezing experiment on pages 281-284, I was able to work it out myself. The answer is 840. I found this by counting the number in a half teaspoon and multiplying by two, genius that I am. (Alas, this was before I realized that I could have counted the number in a quarter teaspoon and multiplied by four.) Which reminds me of the joke about a guy on a train counting cows in a field. When asked how he could do this he explained that he counted their legs and divided by four.
Now you may think this was an idle exercise and wonder if I am not slyly making fun of Wolke's book. Au Cointreau! What I learned by counting sesame seeds exemplifies one of the lessons in the book, namely how hard it is to measure anything exactly. On page 294 Wolke asks, "Have you noticed how surface tension makes the liquid bulge up above the rim of the measuring spoon? How accurate can that be?" Well, I have, and I want to tell you getting a straight line of sesame seeds across the top of that measuring spoon was no piece of cake either!
There are nine chapters and a really excellent index, suggestions for further reading and a brief glossary. There are some excellent recipes by Wolke's wife, Marlene Parrish. I performed a "thought experiment" on several of them and found that my mouth was watering. One of them, how to make turkey or chicken gravy on page 156 is almost exactly the way I make it. (Smile.) Parrish uses the roasting pan, transferring it to the stove top burners after removing the bird, and then deglazes the pan more or less in the French style. I must note that on the previous page Wolke himself does not recommend this technique finding it "hard to straddle two burners" not to mention "one big cleanup job after dinner."
Which makes me wonder who makes the gravy in their household--or, better yet, who does the dishes!
The chapters begin with sugar, "Sweet Talk" and end with "Tools and Technology." Wolke gives us a full mouthful on the differences between cane and beet sugar, between brown and white sugar, between cocoa and chocolate, and makes me feel good about not being crazy about white chocolate. He separates the sea salt from the rock salt; he explains what MSG is and where it comes from; how home water filters works; why "the nearer the bone, the sweeter the meat" is actually true, and of course how to open a champagne bottle and clarify butter... Ghee, I'm exhausted!

One of my favorite explanations is why beef in the supermarket looks bright pink on the outside and brown on the inside. (See pages 127-128, and, no, they don't spray it with dye, which is what I always thought.) I also liked it when Wolke got down and dirty and tried to fry an egg on the sidewalk, and after some heavy-duty "Techspeak" came to the conclusion that you can't; that frying an egg on the sidewalk is an urban legend. (But try the roof of your Arizona "sun-baked, dark blue, 1994 Ford Taurus" which "measured 178 degrees F, more than hot enough to coagulate both white and yolk.") (p. 193)
The icing on the cake for me (if you will) was Wolke's explanation of "Why Crackers Are Holey" beginning on page 307. What his explanation amounts to is a guide on how to make crackers, which is something I've been stumbling around in the kitchen, trying to do off and on for ages. Two key factors that I was unaware of: One, the oven has to be very, very hot ("saltines are baked at 650 to 700 degrees F."; matzos at "800 to 900 degrees F.") and Two, crackers need holes to let the air out! And now to find an oven that gets that hot...
Here are a couple of witticisms: On page 305 Wolke is talking about ovens that use light to cook food, and "the promotional statements...[that sound] like pseudoscientific hype:" They "harness the power of light." They cook "with the speed of light" and "from the inside out." He comments: "Light does indeed travel, appropriately enough, at the speed of light, but it doesn't penetrate most solids very far. Try reading this page through a steak."
Or, "The makers of matzos, the unleavened flatbread of the Jewish Passover, seem to have gone hog wild (you should excuse the expression) on perforations. Matzos are much hole-ier than secular crackers." (p. 307)
Bottom line: fascinating and fun to read.

Clear and conversational, LA Times food editor Russ Parsons' first book demystifies the chemistry and physics of cooking. Knowing why makes knowing how easier, from picking the best vegetables to creating a stable hollandaise sauce to cooking a tender roast.
From the first page, on which Parsons explains why onions make you cry - a compound called sulfonic acid, lacking in Vidalias, which accounts for their raw sweetness - his book is full of fascinating, illuminating facts. He begins with deep-frying, and explains how to cook efficiently and healthfully, with fat. It's all a matter of getting oil temperature right so that the steam in the food repels the oil. And then there's the little details - why fresh oil fails to brown food, why batters should be firm.
The vegetable chapter - how to pick the freshest and tastiest - and how to keep them that way - is especially useful, explaining why mature vegetables are tougher, how the absence of green in a nectarine is more important than a rosy blush, which fruits can safely be purchased under ripe, why potatoes change color when exposed to air, why to cook green vegetables uncovered, why lemon preserves color.
Parsons explains emulsifying and the miracle properties of the invaluable egg; he explains how beans and grains go from toothbreaking hard in their raw state to tender soft in cooking and how this property can be used in a variety of ways from making perfect gravy to reheating rice; he deconstructs the mysteries of heat on meat and explains why treating piecrust tenderly produces tender piecrust.
Each chapter includes a summary list of tips and a selection of recipes demonstrating the properties and techniques discussed. An understanding of the science of cookery, Parsons says, enables the cook, freeing her or him from recipes. "The only limit will be your creative ability." Armed with the science, the reader feels more in control, more expert, more willing to branch out. A useful resource for any cook.
