I love a cookbook that has color pictures of EACH dish! Its nice to know what its supposed to look like. This cookbook has variety and makes complex interesting recipes easy for even a novice in the kitchen. I own them all and can't beleive I survived without them.

I used this book to help create a very successful Moroccan dinner party. I used 9 recipes from this book. The Lamb Marrekesh Stew, Tomato and Eggplant Salad, Dates with Almond paste and especially the Chicken B'stila were EXELLENT! The instructions were clear and I liked that Kitty Morse indicates how far in advance the dishes can be made and which ones are freezable.
There was plenty of information about Moroccan dining to help me make the dinner more authentic. We washed our hands at the table with orange blossom scented water and ate with our fingers. Our guests LOVED it.
Kitty has included a list of suppliers which I found very useful. I was even able to order Moroccan wine and beer from an importer on her list.
I hoghly recommend this book. It is the first book I have ever felt motivated to rate. It is that good!

This is a great cooking book. It uses mostly easy to find ingredients, it goes step by step and doesn't assume you know something you may not (as other cookbooks sometimes do). Mostly the dishes are healthy. I wish they would re print this series.

I did not anticipate using this book very much, and purchased it intending to use one recipe I was familiar with and wanted. I ended up using nearly every recipe in the book. I have come to understand the artistry of cooking by studying the different uses of flavor and textures in this book. Whats even more appealing is that CPK donates all their proceeds from the book to charities. I would say the only downfall is that most recipes require planning (making the sauce the day before, stocking the oriental vegetable in the refrigerator, or cooking the chicken beforehand) I would definately say the final dishes are worth the preparation. This is especially a great book if you are interested in expanding the type of cuisine you eat (ie getting away from casseroles, chicken, mashed potatoes, the old standards) and eating more intersting and exotic foods, especially vegetables.

CPK brings a wide variety of international cuisines to the pizza crust. I was delighted when they came out with this cookbook, but was disappointed to find that my favorite item from the restaurant, the Oriental Chicken Salad, is not included in the cookbook. Well, they need to get me back into the restaurant once in a while. The recipes make extensive use of cilantro and garlic. Also note, that although the recipes are easy to make (as cited by the other reviewers), the first time you make the recipe it make take a long time. For example, the first time I made the Shrimp Scampi pizza (listed as Shrimp-Garlic in the book), it took me about 3 hours, not including the dough preparation time. This is because just making one ingredient, the roasted garlic, took about an hour. Since then I have learned which ingredients can be prepared in advance. The Shrimp Scampi Pizza with whole wheat crust is the best pizza that I have ever tasted, and that opinion has been shared by everyone who has tasted it. It is better than the restaurant's and worth the trouble. Another family favorite from this book is the broccolli with sun-dried tomatoes. Again, except for getting all that garlic peeled, this recipe has a minimum number of ingredients, is quick to make (30 minutes), is extremely tasty, and can feed a crowd. You feel really special when you get to have this for lunch the next day.
