Tastes from a Tuscan Kitchen (Hippocrene Cookbook Library) Review

Tastes from a Tuscan Kitchen (Hippocrene Cookbook Library)
Average Reviews:

(More customer reviews)
One of the newest additions to the simply outstanding roster of ethnic cookbooks from Hippocrene, "Tastes From A Tuscan Kitchen" is the collaborative effort of Italian culinary experts Diane Nocentrini and Madeline Armilotta who first met in a small village about 16 miles outside of Florence, Tuscany. They decided to co-author a Tuscan cookbook with recipes specifically designed for the American kitchen cook and which would reflect the culinary traditions, flavors, and dishes of the Mediterranean countryside of Tuscany. Showcasing more than 150 recipes that are easy to prepare on short notice, wholesome, nutritious, delicious and particularly suited to daily cooking schedules, the recipes range from appetizers, to soups and salads, to entrees and desserts. Of special note are the chapter of recipes devoted to the use of Eggs and section devoted to Tuscan wines. The recipes feature such tempting fare as Lasagne con Ragu (Meat Lasagne), Costolette di Maiale con Salvia e Chianti (Pork Chops with Sage and Chianti), Frittata di Patate e Verdure (Potato and Vegetable Omelet), Pomodori Ripieni con Riso (Stuffed Tomatoes with Rice), and Semifreddo al Caffe (Coffee Parfait). With the added inclusion of a chart of metric conversions, "Tastes From A Tuscan Kitchen" is a welcome and core addition to any family or community library ethnic cookbook collection.

Tuscany evokes visions of sunflower fields, clear blue skies, and delicious aromas floating through the warm breeze--central Italy at its most beautiful. The Tuscan cuisine is filled with nature's treasures. Fragrant olive oil, fresh herbs, fresh fish and vegetables, and warm creamy cheeses abound. Over the years, the authors have collected many recipes from friends and relatives living in the Tuscan region and throughout Italy; here, they present over 150 of the best. In Tastes from a Tuscan Kitchen, you will find a wide variety of recipes, ranging from such staples as Pasta e Lenticchie (Pasta and Lentils), Cacciucco (Fish Soup), L'Impasto (two perfect pizza doughs), to Castoletti di Maiale con Salvia e Chianti (Pork Chops with Sage and Chianti), Scaloppine al Limone (Veal Scallops with Lemon Sauce) and Polpette di Macinato (Tuscan Meatballs). Delicate crêpes are stuffed with a variety of savory fillings and covered with the perfect topping--a creamy, rich Béchamel Sauce. Then there are the sweet crêpes and charmingly named Bongo (Chocolate Profiteroles) that easily melt in your mouth. Tuscan sauces, crostini toppings fragrant with herbs, creamy risottos, even delightful ways to use leftovers--try Polpette di Patate (Italian Potato Cakes)--will have you turning again and again to this charming compilation of recipes. And the suggestions for Tuscan wines will keep your mouth watering for more.

I have found this Italian Cookbook to be extremely authentic. It is so well loved that the pages curl. I have shared many copies as Christmas Gifts. A must for every Italian daughter who did not take the time to get Mom's recipes.

This is the first in a series of cookbooks that will be published to honor my mother and extraordinary Italian cook, Giovanna Morelli Falbo. It contains my mother's favorite recipes, those she brought with her from her home in Italy, and that nourished our family and friends as we grew up in Abington Pennsylvania. The next edition, "Giovanna's Legacy: An Italian/American Kitchen," will feature recipes I've developed, using principles I learned from her through the years as we prepared meals together. The book is a collection of over 180 recipes preserving the Italian heritage of a remarkable woman, my Mom. Born and raised in Calabria, Italy, these homemade meals embrace the essence of a woman who loved feeding others and watching their delight. The collection includes recipes from traditional Italian holiday meals to everyday celebrations and dining. You will find recipes such as Antipasto, baked ziti and lasagna, pasta with fennel, olives, tomatoes and pine nuts, rice patties, baccala salad, chicken and veal piccata, roasted pork with fennel, pepper and potato frittata (omelet), stuffed eggplant, Easter Pie, Italian Wedding soup, pizelles, cherry pudding cheese cake, biscotti, tiramisu, marinara sauce, plus more.--This text refers to the Paperback edition.

Ciao Italia Five-Ingredient Favorites: Quick and Delicious Recipes from an Italian Kitchen Review

Ciao Italia Five-Ingredient Favorites: Quick and Delicious Recipes from an Italian Kitchen

I only enjoy cooking a meal if it is easy enough that I can enjoy the process and the end results. Ciao Italia Five-Ingredient Favorites has recipes for hearty Italian cusine that are inexpensive and easy to prepare. She begins the cookbook with a wonderful introduction to the basic ingredients to keep on hand. Of course, five ingredients for the pantry, five for the refrigerator, and five for the freezer. Each recipe section begins with a clever introduction and five tips for that food type. For example, the Pasta section begins with her introduction, "Pasta Police", an amusing comment on incorporating pasta in your diet in a healthy way.
My first-to-try recipes include Zuppa di Paradiso (Paradise Soup), Cheesy Stuffed Meatballs, Coal Miners' - Style Spaghetti and Tortine di Gianduja e Banana (Chocolate, Hazelnut, and Banana Tartlets). Mmmm- Nutella is one of the ingredients!

As in my other cookbook reviews, I always consider the ingredients needed and whether I will be able to easily find them in my small-town area. There were a few cheeses that I am not familiar with, but even in the two small towns around here, there is a good cheese selection. I don't think I will have any problem finding them.

This is definitely a great gift for a bridal shower gift, Christmas gift, or an addition to your own cookbook collection. A great everyday book!

What a wonderful book! I just got it and can't wait to get into the kitchen. Wonderfully varied recipes and beautifully organized. A comprehensive treasure for any kitchen library.

Countries all over the world have their own kind of"rustic" food -- simple, thrifty, hearty, unpretentious, and full of flavor. Earthy and tantalizing, rustic is the kind of food that memories are made of, passed down through generations of grandmothers and aunts to daughters and sons. In The Rustic Table, IACP Award-winning author Constance Snow re-creates flavors from more than twenty-five different countries with more than 200 recipes for starters, sides, entrées, and desserts.

For breakfast, try West African Spice Doughnuts, Vietnamese "Happy Pancakes," or Swiss Fruit and Mixed-Grain Porridge. Lunch and dinner possibilities include light entrées like Asian-Style Noodle Salad with Spicy Sesame Dressing and French Vegetable Soup with Basil and Garlic, as well as hearty dishes such as Korean Grilled Beef, Native American Planked Salmon, and Greek Lamb and Bulgur Meatballs with Cucumber Yogurt Dip. And there's no dessert like a truly rustic one: Creole Praline Bread Pudding with Warm Whiskey Sauce, Thai Sticky Coconut Rice with Mango and Mint, or Shaker Lemon Pie.

The Rustic Table is a real taste of really easy rustic food. This is a cookbook for home cooks who enjoy using ingredients as close to nature as possible and who want to prepare food with ingredients that are easy to find and recipes that involve just a few quick steps.

Mangia, Little Italy: Secrets from a Sicilian Family Kitchen Review

Mangia, Little Italy: Secrets from a Sicilian Family Kitchen
Average Reviews:

(More customer reviews)
After so many copies of Italian books that I've thrown out, this one works. It was recommended to me by several professional cooking teachers. I made the Cassata cake, the mother or all Sicilian cakes, and it was fantasik. Romina's 7-Hour Sunday Sauce is the best I've ever made. The family went crazy with the results. I even found pizzas here I have only heard about, such as "Sicilian Christmas Pizzas" stuffed with pork and spinach, and Salted Sardine pizzas. These recipes are impossible to find, and they all worked. I also made her Lemon Cakes which has that homemade taste in the crust topped with cinnamon that I remember Grandma making. This is a book you can read for folktales or cook with. That is rare. I particularly loved the author's tips called "Secrets of Success" on the side of the pages, it helps to make cooking easier. So if you want to make an authentic Lasanga the way it was at the turn of the century or a real Sicilian pizza, the way it's made in Sicily, this is the only book that I've found that is the real thing. Bravo Francesca Romina!

My Italian Kitchen: Home-Style Recipes Made Lighter & Healthier Review

My Italian Kitchen: Home-Style Recipes Made Lighter and Healthier
Average Reviews:

(More customer reviews)
I purchased this cookbook a few days ago and have been reading the recipes. I bought it because it offers great recipes for Italian food that have a calorie and fat count. My husband and I are health-conscious eaters and want to have the nutrition information about recipes. I found that in this cookbook the calorie counts for the recipes seem way too low. For example, the recipe for Cream of Pepper Pasta shows the calorie count, based on 1/4 pound of pasta with sauce, as being 299 calories. According to my box of whole wheat pasta, 100 grams of pasta (which is less that one quarter pound) has 370 calories in it...without the sauce. The sauce has 2 tablespoons of olive oil and one-quarter cup of heavy cream, so I just don't see how the calorie count for this dish can be 299 calories per serving. The recipe for Hummus lists the calorie count at 60 calories, based in one quarter of the recipe per serving. But, the recipe calls for over 8 tablespoons of olive oil. One tablespoon of olive oil has 120 calories. If there are 2 tablespoons of olive oil in each serving, than the calorie count per serving has to be more that 240 calories. Maybe I am missing something...but the numbers just don't add up. It is disconcerting to me because I bought this cookbook with the idea that we could eat a good Italian meal and stay within our calorie requirements. But, I simply don't trust the numbers. I will probably return the book and try to find a cookbook that I feel is more accurate.

Cooking with the Seasons: A Year In My Kitchen Review

Cooking with the Seasons: A Year In My Kitchen

I find this cookbook to be wonderfully readable, whether for cooking or for curling up by the fireplace to read on a Sunday afternoon. I am not a very experienced French cook, I am just learning. However, I visited France for a period of time, staying with a French family. I find the recipes here to be much the same as the home cooking I recieved while in France. It may not be fancy Parisian fare with elaborate sauces, but it is not intended to be that. It seems to be written as a book for French (Brittany to be specific) country home cooking. True French cusine focuses on the freshest local ingrediants available, beautifully prepared, and that is just what is in this book.

Yes, I love to cook. I love to try new things and experiment with ingredients I've never used before. I like to `wow' myself and others with food. Oh, and I love Italian food, which is the primary reason why I snatched this up. Upon opening this book though, I realized that this was far more than I anticipated. This isn't your mom and dads Italian food. This is experimental, interesting and unique takes on Italian cuisine.
My heart skipped a beat.
Now, unlike others, I am not one who is going to knock this down a peg because the ingredients used are not familiar to all grocery stores. This is not for the `I just need something quick and easy to feed my family' type chef, so if that is what you are looking for...walk away. This cookbook is for the chef who wants to be something more than he (or she) already is. This is for the person who wants to try new things and learn how to expand their culinary skills.
It's funny because my mother and I were just talking about getting together and making fresh pasta, and then I get this book complete with recipes on FRESH PASTA! I couldn't believe it. That right there is further proof that this is not your average cookbook.
The recipes, despite containing complicated ingredients and despite relying on a certain level of skill to execute (you won't be able to handle all of these recipes the first day in), they are easy to follow and contain nice illustrations that showcase the richness of the food.
In the end, I'm all head over heals in love with this book. Be forewarned, this book contains recipes that use Ox Tail and Urchin Roe, but if want to tap into your culinary wild side, this book is the perfect complement to your impending journey!
Bon appetit.

This is a book for people who love to eat - cooking is not really necessary for its enjoyment! Ms. Kasper is a wonderful writer who paints with words as beautifully as she cooks. Recipes are forthright - simple ingredients simply prepared. (For those who want a more complicated cuisine I'd recommend her first book ("The Splendid Table"). Here she tells tales and recites the folklore of the Italian countryside; she explains the heartland of the country and and the heart(s) of it's people. Since we can't all travel with Ms. Kasper as she makes her rounds, this is as close to heaven as we can get without a plane ticket! FIVE STARS!

I tried the Normandy Shrimp and the Argentinean Empanadas and both recipes were great tasting and easy to prepare. I am always looking for healthy recipes that I can incorporate into my busy schedule and this book is full of them. The book also includes some background on Eva's love of food and includes pictures of her with her family. Highly recommended.
