If you are obsessed with cooking and want a sense of the history of French cooking and cookbooks, this is the book for you. Don't buy it if you are looking for a fun dramatic read. I give it 4 stars, mostly for not contextualizing the cooking enough within the times; it's more a scholarly paper on cookbooks. She is more focused on recipes, origins of recipes, and history of recipes. However it is fun and very cool to have the 25 transcribed recipes in the back. I enjoyed it thoroughly.

Wolfgang Puck's Modern French Cooking for the American Kitchen : Recipes from the Famed Beard Award-Winning Owner of Spago Review

Wolfgang Puck's Modern French Cooking for the American Kitchen : Recipes from the Famed Beard Award-Winning Owner of Spago
Average Reviews:

This famous chef takes classics from French cuisine and adds the California touch of some lighter sauces with American ingredients.
He relates that this book was tested on students in his cooking school, so the average home gourmet should be able to pull these off. I would not encourage beginners to try one of these for a meal unless they practice the technique several times before the real thing. Puck has great suggestion: If you are giving an important party, it is sometimes better to present five recipes that you have mastered, rather than struggle with twenty that are new to you."
What I love about Puck is the attitude he brings: kinderspiel--my child's play. Share and laugh, great advice.
Especially have enjoyed preparing Lamb Chops with Cream of Shallots and Coulibiac of Pike with Crayfish. With each entree he also suggests an appropriate wine.

Kitchen Gardens of France Review

Kitchen Gardens of France

The french seem to know how to enjoy life. They have even created their kitchen gardens as works of art. I looked long to find a good book on potagers with pictures of real french gardens after reading "Four-Season Harvest" by E. Coleman. And here they are!
More of a coffee table book of beautiful photos of gardens then a how to/design book. But still full of great ideas that will get you motivated and reworking your garden immediately.
These gardens are very functional and very lovely. Not as structured as others, which I rather liked.

Kitchen gardens are a long-standing French tradition. Each region has areas which - depending on climate, terrain and design - boast a range of vegetables, fruit, flowers and herbs. This volume seeks to rediscover old-fashioned gardening techniques and obscure produce in an exploration of authentic vegetable gardens growing alongside chateaux or abbeys, small family plots, romantic gardens tended by parish priests, gourmet gardens planned by master chefs and ornamental gardens. The book is divided into four main sections, covering stately homes, country houses, dreams and utopias and garden produce, illuminating the history of the French countryside. Photographs reflect the colour and diversity of vegetable gardens from Paris to the Alps.

Countries all over the world have their own kind of"rustic" food -- simple, thrifty, hearty, unpretentious, and full of flavor. Earthy and tantalizing, rustic is the kind of food that memories are made of, passed down through generations of grandmothers and aunts to daughters and sons. In The Rustic Table, IACP Award-winning author Constance Snow re-creates flavors from more than twenty-five different countries with more than 200 recipes for starters, sides, entrées, and desserts.

For breakfast, try West African Spice Doughnuts, Vietnamese "Happy Pancakes," or Swiss Fruit and Mixed-Grain Porridge. Lunch and dinner possibilities include light entrées like Asian-Style Noodle Salad with Spicy Sesame Dressing and French Vegetable Soup with Basil and Garlic, as well as hearty dishes such as Korean Grilled Beef, Native American Planked Salmon, and Greek Lamb and Bulgur Meatballs with Cucumber Yogurt Dip. And there's no dessert like a truly rustic one: Creole Praline Bread Pudding with Warm Whiskey Sauce, Thai Sticky Coconut Rice with Mango and Mint, or Shaker Lemon Pie.

The Rustic Table is a real taste of really easy rustic food. This is a cookbook for home cooks who enjoy using ingredients as close to nature as possible and who want to prepare food with ingredients that are easy to find and recipes that involve just a few quick steps.

French Classics Made Easy: More Than 250 Great French Recipes Updated and Simplified for the American Kitchen

This is an awesome cookbook! I bought this because I have absolutely no experience with French cooking, thought it would be fun to try, and am a grad student so I don't have hours on hand to spend in the kitchen. I'm so happy I bought it!
Richard Grausman puts a lot of himself in the cookbook in a way that makes me feel like I'm taking a fun cooking class taught by somebody I really like. He adds a lot of notes about why you should or shouldn't do things a certain way, which I think is a sign of a good teacher and helps me be a better cook. And it never comes across as patronizing.
The really nice thing about it, too, is that the recipes are actually affordable. Sure, a few of them have some pricier ingredients, but Grausman always gives the chef an out if need be.
If you want to try French cooking, buy this cookbook!

Classic French food is hotter than ever. But one thing hasn't changed-few of us have the time, the patience, the technique, or the cream and butter allowance to tackle the classics as presented by Julia Child's Mastering the Art of French Cooking. The good news is-we don't need to. For the past 40 years Richard Grausman, America's premier culinary teacher, has been training American chefs in a simpler, better way of French cooking, and in French Classics Made Easy-a refreshed and updated edition of his original collection, At Home with the French Classics-he shares all of his extraordinary innovations and techniques. Golden soufflés in ten minutes. A light and luscious chocolate mousse that can be made as a cake, a chocolate roll, soufflé, or pudding. Plus Cassoulet, Boeuf Bourguignon, Coq au Vin, Bouillabaisse, Poached Salmon with Beurre Blanc-in all, 250 impeccably clear, step-by-step recipes in range of anyone who knows how to boil water or dice an onion. When a step isn't critical, Grausman eliminates it. If something can be done in advance, he does it. Plus he's cut the amount of butter, cream, egg yolks, salt, and sugar; the result is health-conscious recipes that don't compromise the essential nature of the dish. Techniques are illustrated throughout in line drawings. It's the grandness of French cuisine, made accessible for both entertaining and everyday meals.

This is a fabulous book for anyone interested in fresh French cooking. The recipes are simple and appealing, with most of the required ingredients being easy to locate. Lush color photographs throughout will help to whet your appetite. I've only made two of the soups so far, The Good Wife's Soup and Cauliflower Soup, both of which were divine and very easy and quick to make. The first was a sort of potato-leek-cheese concoction and the second was a big hit with company! I cannot say enough good things about this book.

I'm pretty sure this is the exact same book as Joanne Harris's My French Kitchen: A Book of 120 Treasured Recipes. I was under the impression they were two different books. Oh well, this one will be going to my sister as a "just because you're my sister and you've put up with me for so long" gift!! (with pg. 236 marked, it's Vianne's spicy hot chocolate from the movie Chocolat, yum!). At any rate since both this one and "My French Kitchen" seem to be the same book, I will still say that I love them both and the latter of the two has been in my collection for years. The photos are beautiful and make me want to jet off to France this instant. The recipes are delicious and refreshing.

Joanne Harris' bestselling novels, "Chocolat", "Blackberry Wine" and "Five-Quarters of the Orange", are affectionately known as her culinary trilogy. In them, Joanne Harris whets our appetites with some tantalisingly delicious recipes taken from her own grandmere's recipe book. For, like Framboise, the heroine of "Five-Quarters of the Orange", Joanne has family recipes which have been passed down through the generations and which she shares with us now in a mouth-watering celebration of French cuisine. From pumkin soup to Moules Mariniere, from Tarte aux cassis to Fouace Aveyronnaise (Grandmother's festival loaf), and taking in salads, starters, fish, poultry and plenty more along the way, these are simple and stylish recipes from the heart of the French family kitchen. Illustrated with stunning integrated photographs and complemented by anecdotes from her family, past and present, "The French Kitchen" will be a must-have cookbook for all lovers of food and France.

The Modern Kitchen Garden: Design. Ideas. Practical Tips Review

The Modern Kitchen Garden: Design. Ideas. Practical Tips
Average Reviews:

(More customer reviews)
A self described, "virgin gardener" sets out to offer a "behind-the-hedges" glimpse into 17 of the world's best kitchen gardens. Each kitchen garden has a few pages of background and history, with the majority of dedicated space for each section devoted to pictures, not always of the actual gardens, but more of an artsy look at anything from garden tools, flowers, to the architecture of the outer buildings. How many pictures of cabbage and red swiss chard do you need in a book? I count at least 12.
Each best kitchen garden has one highlighted paragraph of a practical nature, like " Sunlight and Design" ("Full sun is best for vegetable growth"); "Designing for a Narrow Garden"(Try sectioning it into smaller gardens first"); "Creating a Walled Garden" (surround it with high hedges or walls). There is no detail as to the how. This is definitely NOT a how to book.
I am still confused as to why the title is The Modern Kitchen Garden, since some of highlighted kitchen gardens like, The Kings Garden at the Palace of Versailles, are classic, and not modern and have been in so many garden books, I would hardly call it a "behind-the-hedges" look. I did not expect this based on the title.
The last element of each section, is a very rough layout drawing of the kitchen garden presented, with general description of what is grown in some of the beds. Again, there is no detailed description.
The best part of the book is the actual pictures of some of potager gardens, and I was able to get some ideas from looking at the pictures. Again, the lack of any details on construction, materials, etc is disappointing. There was a very intersting picture of a Chef's garden on a roof of a hotel that is vertical, and sort of looks like bookshelves with plants growing on it, but the lack of detail makes it difficult to grasp the entire concept with just one or two pictures. Overall, there are too many artsy pictures NOT of the potager gardens, and a serious lack of detail on "Modern Kitchen Gardens" which is why I purchased the book.

While I was honored to be a student at Le Fey at La Varenne the summer of 99, I was also delighted to see the approval copy of this book on her coffee table. The books reads just as she speaks. Her extensive knowledge gains respect with anyone who has been in any kitchen, and her personable style makes it a delightful journey to France for those who have traveled there, or those who hope to soon. The recipes are very straighforward, and I can affirm how well the recipes are tested before they go out of her kitchen. [For example: The most helpful section of the Cook It Right book is when she tells you what has gone wrong, and how to fix it.] Her thoroughness is so appreciated by those of us who continue to learn throughout our lives. The Chateau Kitchen will be an absolute favorite, on your coffeetable, or kitchen shelf alike.

French Country Kitchen: The Undiscovered Glories of French Regional Cuisine Review

French Country Kitchen: The Undiscovered Glories of French Regional Cuisine
Average Reviews:

(More customer reviews)
In the French Country Kitchen, James Villas goes beyond the basic French items known to Americans as French food, and further explores the true essence of French cooking in France.
The introduction delves into the amazing French Paradox, the question of how the French eat suchheavy food, yet have half the rate of heart problems of Americans.
And the recipes in Mr. Villas' masterpiece are also just as interesting. I found the recipes to be very informative, and most were preceded by a humorous or thought provoking anecdote about the French countryside. Each recipe also informs the reader what part of France the particular recipe is from, such as Provence, Flanders, or Alsace.
The recipes are all delicious, and most are relatively easy to prepare as well, contrary to popular belief that French cooking is extremely difficult.
In addition to all the wonderful recipies, Mr. Villas also includes a chapter about bread, and the salade verte, both of which are very important in France. This book is truly interesting, even for someone who dosen't cook. It is worth reading just for the parts about French culture, as well as for the recipies. Bon Appetit

Cuisine a Latina: Fresh Tastes and a World of Flavors from Michy's Miami Kitchen
Average Reviews:

(More customer reviews)
A classically trained French chef who grew up in Cuban-flavored Miami with an Argentinean mother and Midwestern father, then lived in New York and spent time in Italy, Bernstein, owner of Michy's in Miami, offers cosmopolitan fare, some of it simple, some much less so.
Like Seared Foie Gras with Mexican Chocolate and Cherries. Or Beet Salad with Blue Cheese Chantilly (Blue cheese mixed with heavy cream). Or Prosciutto-Wrapped Trout Stuffed with Fennel and Leek.
But Shrimp on Toast with Peas, Tomato, and Parsley is a simple comfort food as is Collard Greens with Balsamic and Brown Sugar, or a fragrant braise of Pork with Prunes and Apricots. Angel hair Pasta with Artichoke Hearts, Olives, and Tomatoes could be tossed together after work. Duck Breasts with Oaxacan Mole is complex but, once made, the mole can be refrigerated for three months.
Each recipe is introduced with a bit of culinary evolution, and Bernstein sometimes offers serving suggestions and plating ideas - gorgeous color photos also help with presentation ideas. Lively and ambitious, this is a book for the fairly assured cook.

I received an advanced reader's copy of Julia's Kitchen and read it in one evening, unable to put it down. Julia's Kitchen is a touching portrayal of grief and mourning and rediscovering your personal strength. Given the other topics that young adults and adolescents are reading these days, I hardly think this will be too hard for them to handle. While the subject matter is incredibly painful, and I found myself often weeping, it's a beautiful, well-written story and I can't recommend it highly enough.

Chocolate and Zucchini: Daily Adventures in a Parisian Kitchen Review

Chocolate and Zucchini: Daily Adventures in a Parisian Kitchen
Average Reviews:

(More customer reviews)
"It's great to nudge yourself out of your comfort zone, as that's how you'll grow as a cook, but don't take things (or yourself) too seriously: play with your food, and do whatever feels right and enjoyable. Something humble and simple, whipped up lightheartedly, will always taste better than an elaborate dish prepared by a stressed-out, cranky cook." -Clotilde Dusoulier
That's on page xxi in the section 'My Cooking Philosophy" of the book "Chocolate and Zucchini: Daily Adventures in a Parisian Kitchen. If that way of thinking and approaching food appeals to you I know you will enjoy this little gem of a book! Trust me. It's innovative, down-to-earth, fun, yet practical too, with the occasional 'leap of faith' e.g. the chocolate and zucchini cake.
This book presents what a talented and creative lover of food might very well "throw together" at home in Paris and encourages you to do the same, no matter where you live. I wanted to write a review the day I received it (yes, I've followed her Blog for quite a while) for it seemed already familiar, like an old friend dropping by who had been on a journey and was now in my home. BUT to review a cookbook without trying out the actual recipes did not seem logical to me.
It's a fun read with great advice and yes, you can shut your eyes and pretend you do live in Paris (yet when you open them it's best to have some food sitting there)! Without too much effort you can please yourself and freinds with "downhome Paris" cooking in no time. To start - the Chocolate and Zucchini cake I found was best if you did NOT tell your friends the name of said cake..... just offer it casually with a side of ice cream or gelato or just as is and watch them ask for another piece. I made it with butter but Clotilde also suggests the peppery undertone of olive oil. I appreciate the optional method being given. Trust me, it's delicious!
The Honey Spice Loaf, perfect for Fall was also great in the Summer! If you like molasses and spice cookies, you'll love this loaf. Clotilde suggests candied ginger as an option and I heartedly agree. It really added a nice texture and added flavor kick.
The Curried Turkey Sandwich is wonderful and is made without mayo. I've nothing against mayo but this was nice and lighter in flavor and fat calories!
Baby Spinach and Shrimp Chilled Soup is light but satisfying and oh so easy. It calls for kefir but buttermilk (which is what I had on hand) may be used.
Lavender Apricot Compote was sublime. Apricots are in season now and I have lavender growing in my yard. No, I don't live in some exotic locale - I'm in Little Rock AR which is too far from Paris but I can pretend otherwise and enjoy the process with the help of this book! If you don't have apricots Clotilde suggests peaches or plums.
Yes, I have enjoyed everything I've made so far (there are more) and did not find anything difficult to put together. Some things may not appeal to some readers such as "Sardine and Tomato Club Sandwich" but I found it delicious and actually something you would secretly throw together when no one was looking and you were maybe home alone, only to discover you had a new delicious offering worth adding to your repertoire!!
I almost forgot to mention that Clotilde also gives wine recommendations for all her recipes - an unexpected plus for such a small cookbook. If any of the above appealed to you, buy this book (you cannot beat the price), read it, enjoy it and cook from it - you won't be sorry and hopefully you'll find a new friend in Clotilde and her enthusiastic approach to eating.

Tupelo Honey Cafe: Spirited Recipes from Asheville's New South Kitchen Review

Tupelo Honey Cafe: Spirited Recipes from Asheville's New South Kitchen
Average Reviews:

(More customer reviews)
Whenever we visit Asheville, which is about an hour away from my home, we always make a point to eat at Tupelo Honey Cafe. It's honestly well worth the drive even if we don't do anything else in town. The food has always been spectacular, using fresh local ingredients, and the atmosphere in the restaurant is soothing and uplifting.I've tried to duplicate some of their recipes at home, coming close with my grit cakes. I was so excited when I heard they were publishing a cookbook and I pre-ordered it from Amazon.
This cookbook has far exceeded my expectations! First, it's a beautiful cookbook just to look through. There are many color photographs of the local area, the restaurant, and of course the delicious meals. But the recipes - oh my goodness!
I love the salad they serve at the cafe and one simple but amazing component would be the sweet pickled onions. I assumed they purchased them, but now I know they make them and now I can, too! The salad dressings are far from ordinary. I've already tried the Pecan Vinaigrette and it's addictive! I'll soon try the Smoked Tomato Vinaigrette and will use their technique for oven smoking the tomatoes. I've used my stove top smoker to smoke tomatoes in the past, but their oven technique sounds like it makes more sense.
The recipes in every section of this cookbook are just as amazing. You'll find southern classics with an upscale twist. Mac and Cheese Casserole with Goulda. Fried Green Tomato and Grilled Portobello Sandwich with Basil Roasted Red Pepper Mayonnaise. Chicken Apple Meat Loaf with Tarragon Tomato Gravy. You'll just faint when you see the recipe for Tomato Pie! And of course the day won't be complete without a slice of Chocolate Pecan Pie.
This is my new favorite cookbook and I can't recommend it highly enough. The recipes make use of the freshest ingredients - nothing fancy or hard to find - and are easy to follow. You don't have to be a chef to prepare them. I'm having so much fun with it, and am giving a copy to Mom for Mothers Day!

As an early pioneer in the farm-to-fork movement, chef Brian Sonoskus has been creating delicious dishes at the Tupelo Honey Cafe in downtown Asheville, North Carolina, since it first opened in 2000. And from then on, Tupelo's food has been consistently fresh, made from scratch, sassy, and scrumptious.Heralding in its own unique style of cuisine representative of the New South, the Tupelo Honey Cafe salutes the love of Southern traditions at the table, but like the people of Asheville, marches to its own drum. The result is a cookbook collection of more than 125 innovative riffs on Southern favorites, illustrated with four-color photographs of the food, restaurant, locals, farmers' markets, and farms, in addition to black-and-white archival photography of Asheville. At Tupelo, grits become Goat Cheese Grits, fried chicken becomes Nutty Fried Chicken with Mashed Sweet Potatoes, and poached eggs become Eggs with Homemade Crab Cakes and Lemon Hollandaise Sauce.Capturing the independent and creative spirit of Asheville, Tupelo has garnered praise from the New York Times, Southern Living, and the Food Network, just to name a few.
