I've read several of Kate Heyhoe's previous books and was eagerly looking forward to this one. Kate Heyhoe's Cooking Green comes highly praised by some of the nation's top food environmentalists, and with good reason. There's a practical strategy on every page to "shrink your cookprint," and, she notes that by saving fuel and water you'll save money, too. Her sources are solid, and she draws on them to cover the entire food chain: EPA, USDA, Institute of Food Technologists, FDA, Michael Pollan, Harold McGee, U.S. Geological Survey (which measures land-water use), and the Department of Energy, to name a few.
For instance: Ovens waste as much as 94% of their fuel, according to the Department of Energy (worse fuel-efficiency than a Humvee). Solutions: scale back on oven-cooking, multitask your oven, and power down before the dish is done to make use of the residual heat (she starts her lasagna recipe in a cold oven and "passively" finishes it by turning off the heat 15 minutes early and leaving the door closed; her recipe is great and shows how to adapt others to the same fuel-saving process). Or, use your cooktop or toaster oven instead of a full oven. Avoiding beef drastically shrinks your cookprint, but if meat's your thing, her her rare roast beef recipe uses 20 minutes of high heat, then passively roasts for an hour with the fuel turned off (traditional recipes use 2 hours of fuel).
Many cooks don't realize that with water, it takes nearly as much energy to jump from "almost boiling" to actual boiling, and that boiling water is the same temperature whether it's boiling fast or gently; so fast-boiling actually wastes fuel. And water takes a long time to cool down, so you can turn off the heat early and use slowly cooling water to gently cook lots of foods, including pasta, lentils, potatoes, green beans, and more. This saves fuel and cuts down on carbon emissions.
She also covers the entire "cookprint" by tackling topics that include avoiding BPA (it's in some bottles and most can liners, but good news: it's not in aseptic paperboard packages, like the ones used for chicken broth and tomatoes); which cookware and small appliances to buy; making perishables last longer so there's less waste and fewer grocery trips; and how to pick greener foods when local and organic aren't options.
This is a great book for anyone wanting to take control of their life and really make a difference. As the author says, going green is all about making choices, and this book is a good choice for anyone who eats.

I'll let you in on a secret- I am 29 and I love this book! I have no patience for cooking, becoming frustrated at recipes that call for too many ingredients and too many steps. That's why this book is perfect for me! The recipes are simple, no fancy ingredients, no time consuming steps, yet the results are delicious. I cooked up the Cinnamon Rolls the other day and my friend thought that they were store-bought. They were so easy to make yet so good. If you are a big kid who doesn't like cooking, check this book out.

I've found the recipes in this book to be, on average, very good to excellent. Many recipes are made entirely from vegetables you can get at the local farmers market. Dependance on soy and soy derivatives is (refreshingly) minimized. This book focuses more on wonderful and delicious recipes made from vegetable instead of trying to imitate or substitute for the usual meat and cheese dishes. No need to special order ingredients from Venezuela or the Ivory Coast either. I found this book approachable, practical, and with recipes that can fit into any meal, vegan or not. I highly recommend this book for anyone interested in cooking with vegetables.

What a nice surprise. I'm not a Marilu Henner fan and I've only glanced at her previous books, but this one caught my eye because of the wealth of information in it. In an easy read fashion, she covers all the basics...how to evaluate your kitchen, how to make changes, what chemicals are harmful both in food and in cleaning supplies and healthy alternatives to both. She lists name brands for healthy food alternatives which takes the trial and error out of shopping. The recipes are not that different from "normal" cooking...a couple of healthy changes and you're on your way to a delicious meal. This book is not entirely vegetarian as it contains both fish and chicken recipes. It is a great place to start in making healthy changes in your life. It's like having several resource books and a cookbook all in one.

I started out by reading Marilu Henner's first two books which were excellent. The "Total Health Makeover", but she referred to Marilyn Diamond in her book and the "Fit For Life" idea. Choosing to do further research I decided to read "Fit For Life" and have never gone back to the old ways of eating.
This cookbook gives you more than just reicipes. This book gives us who want to be healthy (and who aren't the greates gourmets) easy and simple menus that are easy to understand, but better yet she explains why she does the things she does, and the principles behind the things she does. It makes it a lot easier for people to stick to a plan when they understand what is going on in their body, and what they can do to prevent some of the everyday aches and pains that are caused by improper food consumption. By no means am I a cook, or a fanatic! But this cookbook makes my life easier and makes it easier to comply with the way I should be feeding my body. Thank you to Marilyn Diamond and harvey Diamond as well as Marilu Henner. I have never said this before, and probably never will again - THIS COOKBOOK COULD CHANGE YOUR LIFE and MAKE IT 100% BETTER! I promise.

I love this book, as well as Donna Klein's other books, "Vegan Italiano" and "The Mediterranean Vegan Kitchen." My son is allergic to dairy, soy, eggs, and beef, and we try not to eat too much meat, so these books have been great! "The Tropical Vegan Kitchen" does have some recipes with soy in them because it includes the tropical regions of Asia, but there are also plenty of soy-free recipes as well. So many vegan cookbooks just tell you how to use soy to pretend you are eating meat. Klein's books have real recipes that are healthy, tasty, easy to make and use ingredients you already have if you frequent the produce section or farmer's market.

So far, every dish I've made from this cookbook has been delicious. Great basis for a recipe that you can tweak to your liking. I get a fresh box of mixed organic produce weekly (a surprise mix of what is fresh that week! in NY www.urbanorganic.net) and this is a great book to use when I have no idea what do with a certain veggie. Broken down by food (ie. soups, salads, etc) and a great index by specific vegetable/tofu etc as well. I love the way the paperback binding works so that the recipe stays flat and doesn't flip pages. Convenient and helps me stay creative and healthy!

What a wonder this cookbook is! I don't hesitate to say this is by far the most wonderful vegan cookbook I have ever bought; it is simply packed with recipes (and variations), and don't be scared off by the lack of photos, every recipe is simply so mouthwatering! Bryanna Clark Grogan provides delicious alternatives to dairy-, egg- and meatproducts, and there is simply everything you'd need in this book: bread recipes, antipasti, soups, pasta dishes, vegetable dishes, meat-style dishes, desserts (great ice-creams!), you name it. I find myself reading the book again and again, thinking how will I ever have time enough to try out them all ... it is an essential to any vegan kitchen!

This is an easy-to-use and easy to read book with helpful tips on not only selecting and growing, but cooking with your veggies, edible flowers and herbs. There is also a great list of mail-order sources with descriptions of supplies. I especially liked the design section for its simple and straightforward approach to considerations and approaches towards my garden layout.

`Vegetable Soups from Deborah Madison's Kitchen' is a title loaded with significance, for a book by the foremost writer on vegetarian cooking techniques, Deborah Madison. The first implication, which reading the book bears out, is that this is all about vegetarian, but not necessarily vegan soup recipes. As in all her books, Ms. Madison makes liberal use of milk products and eggs, with no apologies for that fact. The second implication is that Madison is turning her name, or more exactly `Deborah Madison's Kitchen' into a brand name, in much the same way as Mark Bittman has turned his `How to Cook Everything' and Rachael Ray has turned '30 Minute Meals' into a brand, with the hopes that brand recognition rather than the quality of the book's contents will get you to buy this book.
On the one hand, I can state categorically that this is the one of the best books I have seen on soups at all, let alone its being the very best book I have seen on vegetarian soups. I will begin by exploring why this is true and later consider how much of this book is original rather than simply being a copy from Madison's earlier excellent books.
The other vegetarian soup book I have reviewed is Paulette Mitchell's `...a beautiful bowl of soup' which is aimed at giving us a collection of `the best vegetarian recipes'. This book is very, very good, and I gave it a high rating compared to the dozen or so other soup books I have reviewed, but Madison's book is better. Both books are excellent at giving good general advice on soup cookery, but Madison's book is superior, in that she goes far beyond Mitchell in repeating her excellent doctrine of creating stocks and broths to enhance the primary ingredients from which the soups will ultimately be made. Madison did, not invent this principle I'm sure. You see it in hundreds of recipes for serious soup recipes, such as when one uses the liqueur collected from steaming open clams as the basis of a clam chowder or using corn cobs to create a corny broth for a corn soup. Madison has generalized this principle and enhanced it with lots of advice on what stock ingredients go best with what. She certainly covers all the obvious stuff such as mirepoix components, fennel, mushrooms, celeriac, and the like. But she also suggests that many nuts, not just chestnuts, are excellent soup and stock ingredients. Madison also does a great job of selling vegetable stocks for being easy and quick to make and, with the right ingredients, almost as bracing as their carnivorous cousins.
While Madison states that many of these recipes are original, there are also a whole lot of recipe types that look very familiar to me. For example, there are lots of bean soups, dried split pea soup, fresh pea soup, squash soup, chestnut soup, cabbage and kale soups, corn soup, cream and roasted tomato soups, and a bean and pasta soup (the old Italian pasta fagiole chestnut!). Like Mitchell, Madison gives lots of variations on some of the more popular types of soups. On the whole, it seems, however, that Madison's soup recipes are just a bit more interesting, with just a bit deeper insight into the interplay of tastes and textures. Comparing the chestnut soup recipes from the two books, Mitchell gives us a pretty ordinary chestnut soup, while Madison gives us a much more interesting variation, adding both fennel and lentils for a bit of sweetness and body. This is very similar to my favorite chestnut soup recipe from Daniel Boulud, who adds apples (great seasonal match, of course) to his recipe for sweetness.
Another very nice feature of Madison's book is that it is organized by ingredient, consistency, and by season. With almost 500 cookbooks, and at least 12 soup cookbooks from which to choose, I find the books organized by season are more interesting sources to find a suitable soup than those organized by ingredient or consistency (most of the time).
I cannot overlook the fact that Ms. Madison has used photographs of some very original pottery to enhance the presentation of her soups. The contribution of her ceramic artist friends is so great, she dedicates the book to these two artisans.
The greatest caution against buying this book is the fact that so much of its general material has appeared in earlier Madison books, most especially the great `Vegetarian Cooking for Everyone', which for me ranks as one of the five very best cookbooks I have ever read, let alone the all time best general vegetarian cookbook. Much of the advice on stockmaking and Madison's ten (10) steps for making soup come from the 50-page chapter on stocks and soups in this book. The new book, however, does include many soup recipes which are not in the earlier book, and where there is overlap of principle ingredient, the new book's recipe is generally more elaborate and more interesting for entertaining.
In all, if you own all of Deborah Madison's earlier books, you will encounter a lot of redundancy. If, on the other hand, you own no Madison books, and you happen to be fond of soups, I cannot recommend this book more strongly. It may not have the great number of recipes as James Peterson's `Splendid Soups', but it is by far the best source for those who wish to be better at ad libbing soup making. This may be comparable to Louis Armstrong's lessons on how to improvise with a coronet.

This book has a lot of great recipes in it and I found it quite inspiring. There a limited photos which are all contained in the middle of the book. My only issue with the book was that despite the fact that I have a very diverse collection of spices and herbs, she seemed to come up with things I did not have. So it is up to you to decide if it is worth the effort to track down some odd ingredient if you want to follow the recipes exact.

One of the first vegan cookbooks I purchased several years ago, and have turned to frequently over the years, is Very Vegetarian (currently available new and used from Amazon), also by Jannequin Bennett - executive chef of TJ's restaurant in Richmond Virginia's 5-star Jefferson Motel. It is an attractive, well-written collection of over 300 plant-based recipes that I have enjoyed perusing as well as using. For those new to vegan cooking, Ms. Bennett's book contains helpful supplemental material introducing what may be unfamiliar ingredients, the recipes are extraordinarily well-written, and 16 color-plates throughout the book help one picture just how enticingly vegan food can be presented. Most importantly, recipes I have tried have been delicious and well received by my family! Naturally, I was excited to see that Ms. Bennett had a "new" collection out this year. What a disappointment to discover that THE COMPLETE VEGAN KITCHEN IS A RETITLED, PAPERBACK EDITION OF HER PREVIOUS BOOK. If I didn't already own the hardback edition, this would have been an exciting new addition to my now extensive collection of vegan cookbooks. It has the same interesting foreword by Olympic Athlete of the Century, Carl Lewis, all the same wonderful recipes, and is illustrated with the same beautiful photos - just presented in a colorful paperpack cover this time around. If you don't already own Very Vegetarian, I highly recommend The Complete Vegan Kitchen.Very Vegetarian
