This cookbook is easy to use with satisfying meals for the vegetarian or meat eater alike. There are no weird, hard to find ingredients which is a complaint I see come up a lot in reviews of vegetarian cookbooks. The Maple Sesame Tofu recipe made me change my mind about tofu from bearable to staple meal. This book is not written by the newest hollywood star gone vegan or the premier vegetarian chef but it is written by a cook who knows food on a spiritual level and it would be a great addition to your collection. These are recipes you would use everyday.

I chose this book among others simply because It has the nutritional information for every recipe . But again , the chutneys and sauces dont have the calorific breakdown.
Moving on to the recipes , being an Indian myself I know how indian food is supposed to taste .. and this book does not reach anywhere near it. Its been COMPLETELY AMERICANIZED .
Also simply adding a pinch of "garam masala" to american soups and italian pasta dont turn the soups into "authentic Indian cuisine "!!!! thats an insult to the readers intelligence.
when I saw the title , I expected a book which would help me cook indian cuisine with the grains and greens available in the US and offer good subsitutions for many vegetables that are not widely available here. and this book completely failed in that respect. Quite a number of the recipes are hashed up new world recipes with a pinch of curry powder thrown in to make them "indian".
If you are looking for a good indian cookbook with AUTHENTIC Indian recipes , this would be a bad investment. If there was a system of negative rating , I would surely give that to this book.
The only book I have liked so far is Julie Sahni's " Classic Indian Vegetarian and Grain Cooking " and I am still looking for something better.

I use this cookbook in combination with another, Greek Vegetarian Cookery, since both have similar recipes but some slightly different ingredients and I love to play when I cook. I see these two cookbooks as equals since they overlap in some areas not in others and where they overlap its interesting to combine ingredients from the two recipes to make something more flavorful. This is a great cookbook even as a stand-alone though, don't get me wrong. There are some excellent recipes for moussaka in here (3 different recipes are provided which is neat). The recipes are all quite easy and don't call for a lot of ingredients - all ingredients are easily found in the supermarket. There are quite a few eggplant recipes in here which for me was great since I love eggplant and am often looking for new ways to prepare it. So far what I've tried has been great. There's a good use of a variety of herbs (such as garlic, basil, cinnamon, etc - things that are pretty commonplace) and they're used appropriately. The chapters cover some of everything: appetizers (e.g. eggplant dip, cheese sticks, stuffed grape leaves - excellent recipe), soups (onion, lentil, chick pea) , salads (black-eyed pea salad, cabbage salad, greek salad, etc), entrees (eggplant soufflé, baked eggplant, eggplant au gratin, falafel, potato patties, lima beans in sour cream, spinach pie, stuffed tomatoes, zucchini patties etc), sides (artichoke dishes, baked eggplant, eggplant in tomato sauce, onion stew etc), breads, sweets. Definitely recommend this cookbook. Nutritional information (fat, protein, calories is provided for each recipe as well)

I've read several of Kate Heyhoe's previous books and was eagerly looking forward to this one. Kate Heyhoe's Cooking Green comes highly praised by some of the nation's top food environmentalists, and with good reason. There's a practical strategy on every page to "shrink your cookprint," and, she notes that by saving fuel and water you'll save money, too. Her sources are solid, and she draws on them to cover the entire food chain: EPA, USDA, Institute of Food Technologists, FDA, Michael Pollan, Harold McGee, U.S. Geological Survey (which measures land-water use), and the Department of Energy, to name a few.
For instance: Ovens waste as much as 94% of their fuel, according to the Department of Energy (worse fuel-efficiency than a Humvee). Solutions: scale back on oven-cooking, multitask your oven, and power down before the dish is done to make use of the residual heat (she starts her lasagna recipe in a cold oven and "passively" finishes it by turning off the heat 15 minutes early and leaving the door closed; her recipe is great and shows how to adapt others to the same fuel-saving process). Or, use your cooktop or toaster oven instead of a full oven. Avoiding beef drastically shrinks your cookprint, but if meat's your thing, her her rare roast beef recipe uses 20 minutes of high heat, then passively roasts for an hour with the fuel turned off (traditional recipes use 2 hours of fuel).
Many cooks don't realize that with water, it takes nearly as much energy to jump from "almost boiling" to actual boiling, and that boiling water is the same temperature whether it's boiling fast or gently; so fast-boiling actually wastes fuel. And water takes a long time to cool down, so you can turn off the heat early and use slowly cooling water to gently cook lots of foods, including pasta, lentils, potatoes, green beans, and more. This saves fuel and cuts down on carbon emissions.
She also covers the entire "cookprint" by tackling topics that include avoiding BPA (it's in some bottles and most can liners, but good news: it's not in aseptic paperboard packages, like the ones used for chicken broth and tomatoes); which cookware and small appliances to buy; making perishables last longer so there's less waste and fewer grocery trips; and how to pick greener foods when local and organic aren't options.
This is a great book for anyone wanting to take control of their life and really make a difference. As the author says, going green is all about making choices, and this book is a good choice for anyone who eats.

If I could only keep one of my cookbooks, this would probably be the one. A wonderful cookbook for vegetarians, vegans and others who want to eat less animal products. Delicious and practical. This book got me hooked on using a pressure cooker (though you can still make the recipes without one) and I now use the pressure cooker all the time! Since its original publication RECIPES FROM AN ECOLOGICAL KITCHEN has been reprinted and is currently available in paperback under the title LORNA SASS' COMPLETE VEGETARIAN KITCHEN. I envy those who are about to discover this cookbook for the first time.

This is not a traditional cookbook. No pictures, lots of essays, some poetry, and basic recipes. What distinguishes it are Espe Brown's pontifications about cooking, zen, life. Like the movie, How To Cook Your Life, this book is an expression of Espe Brown's personality rather that his cooking expertise. The recipes are very basic - but I guess that's the point. He wants readers to cook by feel, by what they already know, rather than by measure and specific instructions. As I read many of the recipes, like the one for kidney bean chili, I thought, Wow, I already know how to do that.
I was also surprised that this wasn't a vegan or a health cookbook. Lots of the recipes call for eggs, milk, cheese, and oil. Not very au courant (the Engine 2 folks would have a fit), but I kind of like that about EB - he's got an acerbic (but loving) sense of humor - he can throw jabs at macrobiotics, and I'm sure at veganism. He's community-conscious and compassionate, but no food purist. Lots of vegan cookbooks seem rather self-righteous and humorless. EB's cookbook is imperfect, but meandering and fun.

Natalia's _Pure Pleasures_ is as much a love story as it is a recipe book. Each page glows with the love she puts into her creations and the joy she gets out of them. And, luckily, we all get to share in the pleasures of this sweet, savory, and sometimes spicy, luscious love affair with living foods. :)
This recipe book is by far one of the most elegant, down-to-earth, well-organized, and easy-to-follow ones that I have come across in the raw food realm. (And, as a raw food enthusiast, I've been through my fair share!) The book is divided into ten sections (introduction, drinks, breakfasts, "small bites," salads, sauces, meals, treats, cakes, and resources), and each of these sections has a fun and personal introduction with mouth-watering, clear, and deliciously amazing recipes to follow. The recipes are as enjoyable to read and make as they are to eat! The best thing about Natalia's recipes (well, aside from the ultimate healthiness and superb taste factors) is that they use simple and basic ingredients, and not ones that require you to become a detective to find!
I also appreciated some of the more subtle details of her book. For example, each recipe has a consistent and organized presentation: creative title, personalized description, individualized recipe list for each component of the dish, detailed and clear instructions for preparing each of these individual components, instructions on how to assemble each of the components together, and an mmmm-inspiring, close-up glamor shot of the finished natural yumminess. And, the consistent color-coding throughout the book was natural candy for my, uh, organizational passions.
Pure Pleasures is such a fitting name for this book: in addition to providing recipes for the most pleasurable living foods, it's a pure pleasure to page through and read.

The first thing you will notice about this book is that it is stunningly lush and beautiful. From the cover photo of Evie looking so faeriesque, to the family photos to all the gorgeous recipes: Evie's Kitchen offers a feast for the eyes!
You might also notice early on that this is a book of love. Shazzie, the UK's most famous raw foodist, wrote this book with a mother's love for her daughter. She researched the content for four years with the passion that only a mother would feel about this topic. Painstakingly recording her daughter's food intake, staying on top of the lastest finds in the world of raw and vegan foods, researching supplements, and finding answers when people told her she had no reason to search for answers: Shazzie goes beyond a typical nutritionist giving stats.
For this reason alone, I would say that every vegan and certainly every raw vegan should own this book. Even if you never intend to raise children as raw vegans, you will find information in here that applies to adults as well. As a Medical Intuitive with a fairly large raw food following, I encounter many, many clients who already follow either a raw or long-term vegan diet. This way of eating offers amazing benefits: just look at the glowing skin, boundless energy and vitality in Raw Spirit Festival photos or YouTube videos. In my own life, I have found raw and vegan foods a wonderful support for mental clarity and energy, allowing me to function at higher levels than I did pre-"permanent"-brain-injury. So, yes, I am a fan. But ...
and this is a big BUT, in my work, among friends, and even in my own life, I have witnessed enough to know that this diet also requires quite a bit of knowledge. Depending on one's reserves of fat, B12, Vitamin D and minerals, someone might thrive on a raw vegan diet for years without much effort. Terrific! The problem I notice so often in intuitive sessions or just socially comes when someone has depleted reserves faster than they've taken them in. Green juices will keep you mineralized, but they won't give you B12, Vitamin D or significant levels of DHA. If you don't drink enough green juices, they may not even provide enough alkalizing minerals to keep your bones and teeth strong in the midst of so much sugary fruit. It's not just the sugar on your teeth; high blood sugar will leach minerals from your teeth and bones if you consistently fail to balance your intake. For someone with lots of reserves, not such a problem; for someone with few reserves to spare, huge problems can happen f-a-s-t.
Enter Evie's Kitchen. Shazzie includes charts with the proper amounts needed for each of these nutrients at different ages. She lists signs of deficiency and signs of excess, along with good sources for each essential building block of a healthy raw, vegan child. Her mama bear dedication comes through in assertive reasons to supplement. While she writes the book for children, much of her research applies to adults as well. I see WAY too many people who desperately need B12 and Vitamin D. While I cannot legally "diagnose" as a Medical Intuitive, I can recommend people ask their doctors for tests. Whenever I have strongly suspected a deficiency, it has always shown itself in blood work. By the time most people contact a Medical Intuitive, their symptoms have usually gotten quite severe. Trust me, you don't want to mess around with Vitamin D or B12 deficiency!
Evie's Kitchen arms you with the tools you need to avoid all deficiencies on a raw diet. More than that, Shazzie offers recipes! Unlike typical gourmet raw recipes that offer improvement over a SAD or SUKD diet without necessarily balancing all the nutrients, these recipes include superfoods, Omega-3's, phytoplankton and loads of mineral rich greens-all taste approved for kids.
With her usual creativity and kooky sense of humor, Shazzie includes recipes for things like "Shoelaces," "Russell Brand's Hair fell on my Plate," and "Monster Slime." If you have picky eaters, you can get them to try things for sheer fun and novelty. Oftentimes, they can even help you prepare the food.
Seeing photos of a cute little girl eating, smiling and loving raw food will go far in helping children relate to a healthy diet that might initially seem weird. I don't have my own children, but I am a proud aunt to four of the pickiest junk food eaters out there. I know that half the battle comes from clever marketing. Spaghettio's just look more fun than zucchini or cauliflower. Well, watch out kids, because Evie's mum knows how to make healthy foods appealing!
For those of you who got into raw foods by reading Shazzie's famous journals, Evie's Kitchen fills you in on "the missing years." When Shazzie decided to switch to "mupdates" (a.k.a. monthly updates), many people in the raw food world felt like they had lost touch with a trusted friend. I hear from clients all the time that "Shazzie got me into raw food. I just love her journal." Well, if you wondered what really went on in those early years from pregnancy to child birth to single mom, Evie's Kitchen provides more than hints. You'll get the full story from gleam (literally) to pregnancy cravings to natural childbirth plans and all the way through Evie's fourth year. If you don't want those details, you can easily skip that section and just read the recipes and science, but for those who like a personal touch, Shazzie gets very personal in Evie's Kitchen.
I have already recommended this book to everyone I know raising vegan kids-raw or otherwise. It's also a fabulous gift for anyone who loves cheese and can't eat dairy. She includes so many different recipes for cheese that she even makes a joke about it, but they're good, and dense, and chock full of things you no doubt need. I cannot recommend this book highly enough to anyone contemplating more than a quick foray into raw and/or vegan foods. Many thanks to Shazzie for having the courage, love and dedication to create this beautiful book.

I've found the recipes in this book to be, on average, very good to excellent. Many recipes are made entirely from vegetables you can get at the local farmers market. Dependance on soy and soy derivatives is (refreshingly) minimized. This book focuses more on wonderful and delicious recipes made from vegetable instead of trying to imitate or substitute for the usual meat and cheese dishes. No need to special order ingredients from Venezuela or the Ivory Coast either. I found this book approachable, practical, and with recipes that can fit into any meal, vegan or not. I highly recommend this book for anyone interested in cooking with vegetables.

What a nice surprise. I'm not a Marilu Henner fan and I've only glanced at her previous books, but this one caught my eye because of the wealth of information in it. In an easy read fashion, she covers all the basics...how to evaluate your kitchen, how to make changes, what chemicals are harmful both in food and in cleaning supplies and healthy alternatives to both. She lists name brands for healthy food alternatives which takes the trial and error out of shopping. The recipes are not that different from "normal" cooking...a couple of healthy changes and you're on your way to a delicious meal. This book is not entirely vegetarian as it contains both fish and chicken recipes. It is a great place to start in making healthy changes in your life. It's like having several resource books and a cookbook all in one.

I had always been intimidated by the ingredients lists in many Indian cookbooks then I took a class with the author. WOW! This book is incredible. Instruction is easy and clear with wonderful serving suggestions. The ingredients are easy to find in my grocery store. My favorite recipe is homemade paneer cheese (p. 165). It is super easy to prepare and always looks elegant in any dish. The paratha (Calcutta Plain Flakybread - p.82) is also very easy and tastes wonderful! This is an outstanding book for vegetarian and non-vegetarian alike.

I have been eagerly awaiting Mariel Hemingway's first cookbook since "Healthy Living From the Inside Out," her first publication, was released years ago. I am happy to report that "Mariel's Kitchen" does not disappoint.
This cookbook emphasizes local, fresh and organic ingredients. It is a good companion to "Super Natural Cooking," a similar cookbook by Heidi Swanson.
I enjoy Hemingway's book better, however, for a number of reasons. For a "natural" cookbook, the ingredients here are much more accessible. You won't have to rush out and buy five new kinds of flour and hard-to-find regional ingredients. Also, this book is NOT vegetarian, which I appreciate. I try to eat naturally, but I do not intend to give up chicken, fish, and beef. (Hemingway is mindful to note when vegetarian substitutions can be made for those who feel otherwise.)
Overall, I would recommend this book to any cook interested in farmers' markets, natural cooking, or simply healthful eating. It is full of beautiful pictures, comprehensive lists of seasonal fruits and vegetables, and recipes organized by season. Hemingway also offers some interesting tips on going "green" and how to best utilize local resources.
Highly recommended!

In people with celiac disease, gluten (the protein found in wheat, barley, and rye) triggers an autoimmune reaction that causes repeated damage to the villi in the small intestines, resulting in malabsorption of nutrients and painful gastrointestinal side effects. As someone with multiple autoimmune disorders (rheumatoid arthritis, Hashimoto's disease and suspected celiac disease), I have followed a vegetarian (and occasionally vegan) diet for the past four years in an attempt to try and improve my health. As soon as I heard that Donna Klein was writing a vegetarian gluten-free cookbook, I rushed out to buy a copy.
I am the happy owner of three of Donna Klein's other veg cookbooks, The PDQ (Pretty Darn Quick) Vegetarian Cookbook: 240 Healthy and Easy No-Prep Recipes for Busy Cooks, The Mediterranean Vegan Kitchen and Vegan Italiano: Meat-free, Egg-free, Dairy-free Dishes from Sun-Drenched Italy, and have long relied on Ms. Klein's simple and authentically delicious vegetarian cuisine that's (mostly) free of soy (I'm allergic to soy as well). She also includes detailed nutritional info, cultural background, tasty variations, and sample menus.
The Gluten-Free Vegetarian Kitchen begins with a thorough introduction on gluten, where it is found, and what products to avoid, including "hidden" sources of gluten such as dressings, baking powder, spices, low-fat dairy, flavored coffees, and more. If you've recently been diagnosed, this is a very handy guide to lesser-known gluten traps. Thankfully, my town has several excellent supermarkets such as Whole Foods and Central Market that clearly label their gluten-free products and contain a large variety of gluten-free baking products, mixes, and flours. More and more restaurants also provide special gluten-free menus, as one recent estimate places celiac disease at 1 in 133 Americans.
Another wonderful feature of The Gluten-Free Vegetarian Kitchen is that it clearly labels recipes as Lacto-Ovo, Egg-Free, Dairy-Free, and Vegan. As many with celiac disease are also lactose intolerant, this made planning around wheat-free AND dairy-free a breeze. Klein also offers practical vegan substitutions whenever practical, in most cases by omitting the cheese or sour cream called for in the original recipe.
One of the biggest challenges in gluten-free cuisine is the absence of wheat products in baking. Instead of wheat flours (including bread flour, cake flour, whole wheat, semolina, barley, and spelt), expensive gluten-free alternatives (tapioca, quinoa, soy, potato, chickpea, cornmeal, buckwheat, sorghum, rice flours, nut flours and stabilizer gums such as xanthan) are used. Klein does include a chapter on baked goods including quick breads, muffins, and biscuits, but due to my personal tastes, I've steered away from GF breads altogether as they are more labor-intensive, more expensive, and more calorically dense than their wheat counterparts.
Similar to her other vegan cookbooks, The Gluten-Free Vegetarian Kitchen is a breeze to follow; if you can read, you can cook. Ms. Klein's instructions are logical and walk you through each step of the recipe. The included nutritional analysis is much appreciated as I watch my fat and sodium intake very carefully.
And the recipes themselves? Divided into the standard appetizers, soups, salads, entrees, and desserts, Ms. Klein rounds out her selections with breads, pizzas, tacos and sandwiches, side dishes, brunch and egg dishes. What really makes The Gluten-Free Vegetarian Kitchen shine is the inclusion of numerous world cuisines including Asian (Thai, Japanese, Indian), Mexican, Caribbean, Mediterranean, and Italian. The touches of international flair elevate gluten-free vegetarian cuisine from ordinary to extraordinary, and are a pleasant departure from Ms. Klein's normally Mediterranean vegan cuisine.
I was instantly torn between several recipes, but ultimately decided on Caribbean-Style Sweet Potatoes and Black Beans over Brown Rice (p. 125), a saucy blend of orange juice, jerk seasoning, cinnamon, cumin, black beans and cubed sweet potatoes, as my first entr'e. Other personal favorites include Kasha Pilaf with Eggplant, Tomatoes, Basil, and Olives (p. 105), Feta and Ricotta Stuffed Bell Peppers (p. 104), Arborio Rice with Tomatoes and Fresh Mozzarella (p. 119), Chili-Brown Rice Casseroles (p. 100), and Mexican Cornmeal Pie (p. 100).
There is something here to appeal to everyone, from Tex-Mex appetizers such as the zesty Mexican Deviled Eggs (p. 15) and Salsa Cheesecake (p. 24) to filling Indian curries. Sweet tooths (teeth?) rejoice: there are numerous satisfying gluten-free desserts including the delightful No-Cook Apple Pie (p. 176), which features a walnut-and-date crust and a fresh combination of raw apples, raisins, and cinnamon and nutmeg, the delightfully exotic (and easy!) Indonesian-Style Warm Bananas in Cinnamon-Coconut Milk (p. 177), Cardamom Sponge Cake with Strawberry Coulis (p. 182), Hawaiian Coconut Cake (p. 188), and Polenta Chocolate-Currant Cake (p. 193) that will have your non-celiac friends oohing and ahhing over the amazing versatility of gluten-free cuisine.
Overall, the Gluten-Free Vegetarian Kitchen is an empowering tool; it showcases the versatility and creativity of gluten-free vegetarian cuisine rather than emphasizing an already restrictive diet. This is a statement of pride and originality - your gluten-eating carnivorous friends will be amazed at these full-flavored, simple international dishes that make the most of beans, legumes, gluten-free grains, and fresh produce. Who knows? You may even convert a few of your friends after cooking them the delightful recipes found within.
