I would have to agree with the previous reviewer that this cookbook tries almost too hard to fit too much in a small space, and that the photos are often useless, including a number of captionless shots of Food Network chefs cooking or chatting. These pictures look like something from a bank brochure, in my opinion.
But I also think that saying this is a "celebrity chef" cookbook is entirely wrong, and that the whole point of the book is to showcase tried-and-true favorite recipes of the NON-celebrity chefs behind the scenes, who make all the glossy TV shows possible. It isn't like Emeril and Sara are in the trenches preparing for today's episode, trying to decide if the cheesecake needs another half-cup of sugar. That's why they're not mentioned in this book, which is quite clearly titled.
As for the recipes, I kicked off my experimentation by making Mory's Honey Challah just tonight, and if I had a Top Five Pieces of Bread I've Ever Had In My Mouth list, this would have to be on it. Many more mouth-watering recipes to try.
One other note: I find that a good number of the recipes include sub-recipes that could easily be used with other dishes, such as a mahi (fish) tacos recipe that includes a sub-recipe for "escabeche," which is basically a spicy, chunky carrot/jalapeno relish, somewhat like the pickled "hot mix" you can buy at the store. It would go swimmingly with any mexican dish, or with any other spicy main course, like something cajun, or a big fat Chicago-style Italian beef sammich. The recipe for brisket (TEN HOURS in the oven! Woo!) includes a homemade BBQ sauce recipe. There are also "master recipes" in the back, for things like chicken stock and broth...elemental recipes that give the reader a broader knowledge to aid experimentation. They're also used in a number of the main recipes, of course.
Overall, a very fine cookbook with a very broad reach. Find the best price and buy it.

This book does what most cookbooks don't: it assumes that you really know absolutely NOTHING about cooking. For those of us for which that is true, this book is a life-saver. It has recipes for the most basic things (how to hard-boil an egg, for example); it gives you a suggested grocery list for your first shopping trip to stock your new kitchen; it give invaluable advice about choosing fresh food and how to store things. As a recent college grad in my first apartment, I consult this book almost daily (I didn't know that fish, if it's fresh, should have NO smell, or that eggs that have gone bad will float). A perfect graduation gift (or just a gift for someone you sense is really suffering in the kitchen).

I received an advanced reader's copy of Julia's Kitchen and read it in one evening, unable to put it down. Julia's Kitchen is a touching portrayal of grief and mourning and rediscovering your personal strength. Given the other topics that young adults and adolescents are reading these days, I hardly think this will be too hard for them to handle. While the subject matter is incredibly painful, and I found myself often weeping, it's a beautiful, well-written story and I can't recommend it highly enough.

I found this book at the library and picked it up, thinking it'd be full of frou-frou recipes that would be entertaining to watch a chef create on TV but not practical for a real kitchen. Boy, was I wrong. This book is full of true recipe gems. I went straight from the library to Amazon to get my own copy. Definitely recommended for anyone who likes to cook.

If you're one of those "Sure, I know how to cook...except I don't want to" people, you need this book. This book gives you the basics on how long you can keep meat, how to pick good cuts, what to do with vegetables, and the essential hints on everything you need to get started. The best part of this book aren't the recipes, but rather the reference guides on the things you never quite know, like how to cook specific vegetables and how to build a soup or smoothie. Great for someone who has just moved into an apartment, or for anyone who wants to get a primer on cooking. If you are puzzled about what tools you need, fear not--it's all very simple, and there are many, many diagrams in case you freak out with too many words.
I would say it's useful for anyone with less training than professional cooking experience. The pictures are wonderful.

I'm just an average thirtysomething, juggling a career, social life, and mad video game habit. Cooking isn't all that high on my list of priorities, but eating out 5-8 times a week is getting boring and expensive. This book is absolutely perfect if you're like me. The recipes are easy to follow, relatively quick to make, and use inexpensive everyday ingredients. Don't let the simplicity of the recipes fool you, though, the food tastes fantastic!
There's a good amount of pictures and charts to help you with things like how to slice every kind of vegetable, carving poultry, and demystifying how to use different cuts of beef.
I found this book to be an absolute lifesaver and has made me less intimidated about trying new things in the kitchen or tackling some gnarly hardcore recipe.
Although this book appears to be geared towards mothers who will pack this book off with their sons/daughters going off to college, I would highly recommend it to anyone who's just starting out in learning culinary skills, or like me, someone who just wants some simple, easy, great tasting food!

I enjoy the PBS series "America's Test Kitchen," so when I received this book as a Christmas gift last year I was very excited. Now, almost a year later, I have cooked my way through scores of the recipes in this cookbook and there is not a dud in the bunch. This book takes basic, American fare and boil it down to it's most essential (and flavorful parts), allowing you to cook tasty favorites. My only caveat is that is you are looking for quick meals, this may not be the best choice--many of the recipes are quite time consuming. However, if you only want one cookbook in your kitchen, this is the one!

I love cooking shows and often read cookbooks for pleasure, picking up tips from each author and pondering what recipes I'd like t try, but I have to admit that I've never been a part of the cooking cult that worships Julia Child. I do remember watching her shows as a child, with my mother, and know she pioneered the genre, but the meals she made rarely appealed to me--too time consuming, too "fussy" and just too "strange" for every day taste. (If I have to visit eight different shops and peruse three mail order catalogs to make a dish, I'm probably not going to try it.)
Recently, I picked up "Julia's Kitchen Wisdom" at the library and was quickly sold. I am now ordering a copy to keep. The book is filled with useful basic recipes and techniques, as well as lots of helpful time-saving tips that Child has picked up over the years. It's not really a recipe book per se, though tried-and-true formulas for things like Hollandaise sauce and pastry dough do appear, it's more of a kitchen guide. It's full of ingredient substitutions, serving suggestions and definitions of terms you may come across. More useful to experienced cooks, it's also a helpful guide for the best technique, according to Child, for things like braising, searing, roasting and folding. Child's years in the kitchen have made here at master and I was pleasantly surprised to find many time-saving techniques and places were Child says the "easy" way is actually better.
This slim volume really packs a wallop of cooking information and I think it would make a nice addition to any cook's bookshelf.

I love this cookbook! WOW.
What I love about this book:
1) Recipes are sectioned by season
2) All recipes are written in paragraph form - with very little instruction (a pinch, a splash, drizzle, etc..)
3) At the beginning of the book, he gives you recommendations for a well-stocked pantry (I passed - woo hoo).
4) At the back of the book he provides tables for Kitchen Express Menus - Weeknight Dinner Party, Romantic Supper, Better-than-Chinese Takeout, Kids' night, Room-Temperature Buffet, Finger-food Cocktail Party, and Picnic/Road Trip, Holiday Blowout and Weekend Brunch. Each table is segmented by season - listing potentially an appetizer, main course, salad or vegetable, side dish, dessert.
5) The food tastes great! My very picky eater 4 yr old son loved the Korean Barbecued Beef that I paired with rice and sugar snap peas.
I highly recommend this cookbook.

I've been a big fan of Cooks Illustrated for years. The America's Test Kitchen Healthy Family Cookbook, is similar in presentation to the Cooks Illustrated magazine which is a good thing. I enjoy the little tips, product suggestions and bits of cooking wisdom that are scattered appropriately throughout the book. Unlike some other cookbooks that can border on how to cook textbooks, this book dispenses little dollops of wisdom just at the right places.
There is an important thing you need to know about this cookbook and its authors though and it concerns the word "healthy." As you discover when you read the "Preface" and the "Our Approach to Healthy Cooking", you learn that this is NOT a diet book. The focus is "about balance and about incorporating more fruits, vegetables and whole grains into recipes on a daily basis, as well as reducing calories from fat wherever we could do so while maximizing taste." In other words, you will still find recipes using butter instead of margarine and added sugar and salt. The recipes may not be the absolute lowest in sugars, fats and salt -or- calories but they will most assuredly taste really good because of their focus on good tasting food that uses "healthier" ingredients. The recipes do not compromise on taste.
Case in point, one of the first recipes I made, which was absolutely delicious and garnered rave reviews from my guests who enjoyed it, was the Plum-Peach Upside-Down Almond Cake. I made the recipe with all peaches. One small detail that the recipe left out was whether the peaches should be peeled or not. I had to refer to another recipe in the book to see how they handled peaches there and in the other recipe they specified peeling the peaches, so I did that for this recipe. Concerning the ingredients, the recipe called for 7 Tablespoons of butter (that's 1 Tablespoon shy of an entire stick), 2 Large Eggs, 1/2 cup of light brown sugar and 3/4 cups of granulated sugar. Are you cringing yet? I was. But let me tell you, the dessert was absolutely delicious... and it was dessert after all. The recipe did make one concession when it called for low-fat sour cream (but only 1/2 cup) so yes, it did make a healthier choice in that regard.
The book is filled with a vast and mouth-watering array of recipes. When I first got the book and started leafing through the pages, I had to stop constantly because one recipe or another would catch my eye and even in the black & white photographs (I was reviewing a "galley" or pre-release copy of the book) the food looked delicious in the way it was prepared. Right off the bat I was attracted to "Smoked Salmon Rolls", "Healthy Smoothies", "Sauteed Chicken Breasts with Orange and Feta", "Stuffed Acorn Squash with Barley" and I could go on and on. There are more than 800 recipes overall covering: appetizers, snacks, salads, soups, stews and chilis, vegetables, rice, grains & beans, pasta, fish & shellfish, poultry, meat, vegetarian entrees, stir-fries & curries, grilling, pizza & tarts, whole grain rolls & loaves, quickbreads, cookies & bars, cakes, fruit desserts & more, and kid friendly.
The diversity and breadth of recipes is excellent. Again, the focus is ultimately on making healthier choices in ingredients without compromising the taste. Reducing fat is one of the main ways these recipes are modified from normal full-fat versions. Also the inclusion of whole-grains and vegetables, minimizing added salt as much as possible and using leaner cuts of meat.
This is not a diet cookbook, nor are all the recipes all going to be as low in calories as other cookbooks. But you can rest assured that these recipes will taste good and be a healthier way to make some classics that are typically not too healthy no matter now you make them, like Meat & Cheese Lasagna. But note that this recipe is 400 calories, 14g of Fat, 6g of salt and 90mg of Cholesterol vs the non-modified version of 530 calories, 30g of Fat, 16g of Salt and 120mg of cholesterol. As you can see a not particularly healthy recipe has been made "healthier."
I really like this cookbook. I'm going to dock it one star because of the incomplete directions that I have occasionally run in to which stop me dead in my tracks until I figure out what to do... like whether the peaches needed to be peeled or not... so just make sure you pre-read the recipes before you plunge right in and start cooking or you may find yourself having to stop what you're doing before you can complete the recipe. I also question the word "Healthy" and think "Healthier" is a better choice.
